How to play Sushi Chef
Sushi Chef is about precision rather than speed. You serve eight courses at the counter, and every course is made in three careful steps.
First you slice. The knife sweeps along a block of salmon, tuna, yellowtail or sea bream, and small marks show where each cut belongs; cut as the knife passes each one. Then you plate. Every slice has its place on the plate, drawn as a faint outline — in a neat overlapping row, a fan or a ring — and you place them one by one, either by tapping the spot or by locking a sweeping crosshair first across the plate and then down. Last comes the garnish: the wasabi and the ginger have their places too.
The judge looks at how close every cut and every piece came to where it should be and gives the course one to five stars. A course with fewer than two stars is sent back, and three sent back means the head chef takes over the counter. Finish all eight courses with an average of three stars or more to complete the service. With every course the knife moves a little faster, the fish needs more cuts, the plating gets more intricate and the judge gets fussier.
